Steve Hack

Butcher since 1996

Growing up in the local area he went to Lane Cove West Public School then Hunters Hill High he Learnt his trade at Hummerstons. During his younger years he loved playing soccer and cricket but now on his days off he’ll be down the beach with his family or cooking a BBQ on his webber. His favourite product in the shop is a butterflied lamb. Best cooking tip is don’t use the fan forced while cooking meat.

Dale Lawson

Butcher since 1986

After 10 years of Butchery Dale took 10 years off the trade to spend time in North Qld working on Adventure and outdoor Activities. He was involved in kayaking and Hiking. He got back into the  trade in 2010. His favourite product is a rump steak, as he says “It’s a simple steak for a simple guy”

On the weekends he like spending time with his wife Sabina and his beloved dog Teddy by going to the beach. During the NRL season you will find him at most Sharks home Games

Jason Hartfield

Butcher since 2001

We welcomed back Jason in 2021 after a 2 year Hiatus to be an important part of the Hummerston’s team. With a young family Jason loves Then Newcastle Knights and hanging out with his 2 kids. He is the B.B.Q expert and happy to share his knowledge on the Charcoal Webber. His favourite product in the shop is the simple Chicken Schnitzel and his tip is to take your time and go low and slow, If you use a Meat thermometer it will take the guess work out.

Chris Brown

Butcher since 1994

Learning his trade at St Ives his favourite Hummerstons product is the Brilliant Foods smoked trout and salmon. Chris loves fishing on his boat and most weekends you’ll find him on the Habour. .

Jacqui Vanzella

Butcher’s assistant since 2021

Jacqui joined the team during her last year at school and is currently studying Mechatronics and Astrophysics at Macquarie University, (during her shifts we enjoy helping her with her assignments). Jacqui loves sailing and is involved in the Hunters Hill Sailing Club where she is a qualified sailing coach. With her Italian Heritage Jacq enjoys cooking when she gets a chance, her favourite product is our rolled leg of lamb with garlic & rosemary.

Leo Bach

Butchers assistant since 2018

After a work experience stint in 2018 from Hunters Hill High School Local lad Leo has been an integral part of the team since. With his youthful energy he can’t wait for the touch footy season and then going to the pub with his mates. During his well-earned holidays you will find him hitting the ski fields overseas. His favourite Hummerstons product is undoubtingly the Pulled Pork Pie

Barney Kidd

Butcher since 1980

Barney grew up in in Naramine then moved to the big smoke for his High school years. He learnt his trade at Chester Hill.  Barneys favourite meal is the Beer can chicken roast. His rule for Christmas day cooking is you can’t have a beer until the roast is in  the oven. Barney likes driving his Clubsport V8, golf and drinking beer. His favourite product in the shop is The Lamb rumps, the Black Angus New York or anything you can cook in the Airfryer and have with a beer.

 Steve Dibb

Butcher since 1994

Learning His trade at North Sydney then moving to the Prestigious Penny’s at Mosman for 20 years, Steve Joined the team at Hummerstons in 2024. He loves the customer service side of the trade and genuinely wants the customer to have a quality experience with each visit. Steve’s favourite product is our Asian sesame pork medallions, but when he needs a protien hit after the gym “nothing goes passed a grass fed Rib Eye”. On the weekend his hobbies are trail bike riding and kicking the footy with the kids.
